We had fresh cranberries that needed to be used…asap.  Since we are well passed the season for cranberry sauce a cake will have to do.  We had fresh oranges on hand and the combination of oranges and cranberries is classic.  The sweetness of the orange and the aroma from the orange zest balances out the tartness of the cranberries.  You’ll find this cake recipe to be fairly simple to make.  It is a pretty substantial cake.  While it is great to serve after a meal as a dessert; it’s definitely strong enough to enjoy on its own as a delightful breakfast or brunch.  The cake almost has a pound cake consistency and it’s buttery, while tart at the same time and not overly sweet.  The almonds add a layer of crunch and gives the cake a rustic look and feel while the cranberries add a beautiful pop of color.  It would be a fabulous cake to serve to your loved ones on Valentine’s Day, Christmas or any day for that matter.

Meyer Lemon Bars

Lemon bars are definitely one of our favorite treats.  It’s the perfect combination of sweet and tart.   Meyer lemons are currently in season and we wanted to take full advantage of that.  Meyer lemons are native to China and is thought be a cross between a lemon and a mandarin.  The rind is beautiful, thin and a gorgeous shade of yellow.   The flesh is a deep yellow with a hint of orange.  The fruit is fragrant and is slightly less tart than a traditional lemon.  Of course you can make these bars with regular lemons but Meyer lemons just make it a little more special.

Orange, Pomelo and Fennel Salad

With the start of a new year, many people are trying to eat lighter and healthier.  This citrus and fennel salad is a great start or accompaniment to a meal.  It’s light, refreshing and so simple to put to together!  The pomelo is an Asian citrus fruit that is sweet and mild compared to the grapefruits that we’re accustomed to eating.  The pomelo and orange adds a sweetness and bit of tang to the salad and a dose of healthy vitamin C.  The fennel is crisp and has a licorice flavor that mellows out when paired with the citrus fruits.  To top it all off, I sprinkle pomogranate arils for a touch of color, hint of tartness and of course some added antioxidants.  Hope you enjoy this quick and easy recipe and Happy New Year!

Mint Oreo Marshmallow Bark

For the holidays I decided to try my hand at chocolate bark.  I wanted to whip up some quick and easy treats for my neighbors and coworkers.  If you like mint and dark chocolate then this is the perfect recipe to make any time of the year.  The combination of mint, dark chocolate, crunchy Oreos and soft marshmallows is delicious and tastes very similar to a Girl Scout Thin Mint Cookie.  You’ll be surprised how easy it is to make bark and how simple it is to use different ingredients to create your own unique flavor combinations.

Tate’s Bake Shop Giveaway

It’s the holiday season and we are excited to announce our first giveaway in conjunction with Tate’s Bake Shop.  Tate’s Bake Shop is located in South Hampton, NY and has earned much recognition for their cookies and cakes.   They sent us the Tate’s Bake Shop Cookbook and three boxes of their cookies (chocolate chip, oatmeal raisin and macadamia nut) to sample and provided another set to giveaway to one lucky reader. 

I can’t think of many better things that remind my me of the holiday season than giving and receiving something special.  We certainly enjoy this time of year when the ovens are fired up and the holiday baking begins.  Quyen has already scheduled her annual cookie exchange and I am looking forward to enjoying some wonderful homemade treats.  The Tate’s Bake Shop’s Cookbook is filled with wonderful cookies and other dessert recipes to put to use in creating your own holiday cookie trays to share with your friends and family.  The chocolate chip, oatmeal raisin and macadamia nut cookies are buttery and crispy with a homemade appeal to them.
