It’s the perfect weather to cozy up with a warm and comforting bowl of tomato soup and a hot grilled cheese sandwich. This is exactly what I did last week for lunch. I headed to Panera Bread for a bowl of vegetarian creamy tomato soup and a “big kid grilled cheese”. I was inspired to make this comforting meal for Derrick this week. I’ve always wanted to make my own tomato soup. It’s a good feeling knowing exactly what you’re eating and that you made it with good fresh ingredients.
Fall is here and I am in the mood for taco soup. It just sounds so good to me: ground turkey, hearty beans, olives, corn and tomatoes in a warm spicy broth topped with cheese and a dollop of sour cream. The best part is this dish is so easy to make and wonderful for feeding crowds or for potlucks.
Tart Cherry Soup is a tart and slightly sweet soup that is served chilled and is very refreshing. It would be a great summer soup. With Valentine’s Day around the corner this pink hue soup would be a romantic starter.
Recipe for a Vietnamese style Chicken Porridge (chao ga). It’s an Asian style porridge (also known as chao, jook or congee), a rice based meal and can be eaten for breakfast, lunch or dinner. It’s one of those dishes that hits the spot when your sick. It’s like the Asian version of chicken soup. It’s light, easy to eat, served warm and so comforting and satisfying on a cold day or when you’re feeling under the weather. The porridge is infused with aromatic ginger and served with a mixture of shredded chicken, thinly sliced onions, coarsely chopped mint and Vietnamese dipping sauce (fish sauce/nuoc mam). It’s one of our favorite dishes during the fall and winter months and we usually make a large pot to enjoy for a few meals.
Miso soup is one of those comfort foods that seems to make everything all right whether your day didn’t go quite right or the weather is less than perfect outside.
