It’s easy to eat through a whole box of Thin Mints…by yourself! Girl Scout Cookies® only come once a year – I have to find a way to share my stash and make it last. What if I could make 10 Thin Mints become at least 16 servings? Sharing is good right?
My delicious solution:
Thin Mint Brownies
I’ve seen these pop up everywhere….and couldn’t wait to try them. But it’s a weeknight, and I don’t have the time to make Red Velvet Whoopie Pies completely from scratch. Some people call it cheating…but I call it being smart….I doctored a red velvet cake mix…so sue me.
I found an easy recipe on “How to Cut Corners on Red Velvet Whoopie Pies” on eHow.
Here’s the recipe :
Easy Whoopie Pies from eHow with some tips/notes
Ingredients:
1 box of red velvet cake mix (eggs, water, & oil according to the box directions)
½ C flour
Filling:
½ C butter (soften)
4 oz Cream Cheese (soften)
7 oz Marshmallow Cream
Here’s what I did:
1) Preheat the oven to 375º.
2) Either grease or line your cookie sheet with a silpat (I used a silpat – less clean up – it’s a weeknight after all)
3) Add a ½ C of sifted flour to the cake mix and prepare the cake according to the box directions
4) Pour batter into a gallon ziplock bag. (To make this easier – put the ziplock bag into a large cup so that the bag has support as you fill it)
5) Seal the bag and cut a small hole in the corner of the bag. Squeeze the batter (about 1″ and 1.5″ apart) onto the cookie sheet. The blobs are suppose to look like a Hershey’s Kiss. Although none of mine did – that’s probably why mine are on the flatter side…all well. Next time, I think I will add more flour for a less running consistency.
6) Bake for 6-8 minutes and then transfer to cooling rack. (I baked mine for about 7 minutes)
7) Prepare the Whoopie Pie filling: cream the butter and cream cheese together. Add the marshmallow cream and mix. Refrigerate the filling for about 30 minutes before spreading on whoopie pies.
Keep in airtight container in the fridge. Take out about 15 minutes before serving. Enjoy!!
Easy Marshmallow Pops
What you need: candy melts, large marshmallows, sprinkles, lollipop sticks & a foam brick
Directions on how to make these simple treats:
1) Melt the candy melts according to the directions on the package (I like to melt mine in a coffee mug so that I have a handle to hold onto and it’s deep enough for dipping my marshmallows) Just melt what you think you’ll need. (about a handful) You can always melt more later if needed.
2) Stick a lollipop stick halfway into the marshmallow. Dip the top half into the candy melt mixture. Swirl it around to make sure it’s coated evenly. Sprinkle your decorations on while the candy melt is still wet (sanding sugar, sprinkles, etc) I stuck a conversation heart on top in honor of Valentine’s Day. (just apply a small dab of the candy melt to the bottom of the candy to adhere) Stick the marshmallow pop into a foam brick to dry.
How to make the conversation heart display:
1) Fill a smaller vase 3/4 full with a filler such as uncooked rice/beans/etc. (I used a glass cup & rice)
2) Put that smaller vase into a larger size vase. Now fill the sides with conversation hearts – or any other small candy (ex: red hots, M&Ms, etc).
3) Voila! You’re done! You can even tie a pretty ribbon around the vase…(unfortunately I ran out of time)
