It’s Girl Scout Cookie season…

It’s easy to eat through a whole box of Thin Mints…by yourself!  Girl Scout Cookies® only come once a year – I have to find a way to share my stash and make it last.  What if I could make 10 Thin Mints  become at least 16 servings?  Sharing is good right?

Osso Buco with Saffron Risotto

I was supposed to make my husband Osso Buco for Valentine’s Day dinner, but I never got around to it….opps!  I did make it for him a couple of days post V-day.  I was excited that I got to use my dutch oven for the first time. Yay!  Talk about heat retention and even heating!  I love my dutch oven and can’t wait to use it again!
Can I tell you again how much I love Giada De Laurentiis?  I used her recipe to make the Osso Buco for this fabulous dinner.  I paired the Osso Buco with Saffron Risotto and course a nice glass of wine!
Next time around I will adapt the Osso Buco recipe for the crock pot….gotta figure out how to have gourmet on the weeknights!  I will also find thicker cuts of veal shanks.  Mine were too thin and the twine just slipped off.  Enjoy!!

Double Chocolate Pancakes

I made chocolate pancakes for some special loved ones on Valentine’s Day:  my little sister and two younger brothers.  They love chocolate and sweets in general.  I whipped these up with the help of a boxed pancake mix for their breakfast, while my husband made me a different breakfast.

Easy Whoopie Pie?!

I’ve seen these pop up everywhere….and couldn’t wait to try them.  But it’s a weeknight, and I don’t have the time to make Red Velvet Whoopie Pies completely from scratch.  Some people call it cheating…but I call it being smart….I doctored a red velvet cake mix…so sue me.

Valentine’s Day Tea – Part 2 {Easy Marshmallow Pops}

Now for the important part…the food.  The food looked and tasted delicious and were all courtesy of Trader Joe’s.  The pigs in the blanket, mini quiche (which I forgot to take a picture of) and scones were all yummy – and I highly recommend them if you’re in a pinch.  The jalapeno puffs were not so popular and I would skip these.  Although the little puffs do look pretty adorable.

The macarons and chocolates were from Valentino Chocolatier.  I especially loved the macarons.  The beautiful bright colors are just so fun and the texture is so light and airy.  The buttery madelines were also from Trader Joe’s.
