Apple Pocket Pies for Easter!

As some of you may know, I made chocolate cake three times last week.  My husband then said (after finishing his piece of cake), “Chocolate isn’t my favorite, can you make something that I like?”  I ask,  “Like what?”  He responds, “I want something with apples.”  Done!

So here it is….for my husband:  apple pies that you can hold in your hand and eat!  It’s perfect, portable, pre- portioned and delicious!  These would be perfect tucked in a cellophane bag with some candy and tied with a pretty bow.  Who wouldn’t want to find this in their Easter basket?  (Sorry – no pictures of the gifting idea – the pies were eaten before it could be wrapped)

I also think it’s a plus when you don’t have to wash a plate and fork afterwards!  It makes you think of a McDonald’s apple pie right?  Do you remember when those pies used to be fried….yum….childhood memories!  Did I just date myself?

You can really do this with any shape cookie cutter.  For Easter, I used a large egg shape cookie cutter that I found at Crate and Barrel last year and a little baby chick cookie cutter that I have no idea where it came from.  I didn’t even know I had it until I organized all of my baking supplies a few weeks ago.  You can definitely make these pies for other holidays/occasions such as a heart with mini heart cut out for Valentine’s Day, star with mini star cut out for 4th of July, turkey and mini leaf/acorn for Thanksgiving.  Oh – an apple and mini moon for The Twilight Saga!  You see, the combinations are endless.

I have to admit…it was a weeknight – and I really – really wanted to give in and buy refrigerated pie dough.  While measuring and mixing the dough…I though – “gosh,  if I was using  store bought dough – I would already be baking by now.”  Then when I got to the step where I had to refrigerate for at least 2 hours or overnight….I was sold on store bought dough….little did I know.

I baked the pies the next day and finally knew the supremacy of homemade pie dough.  I had a fresh baked pie that night – it was flaky, buttery and light in texture.  It was far better.  I get it now.  Sometimes the cheat is worth it – and other times – it’s better to do it the old fashion way.  (but if you’re in a pinch – just use store bought dough…no one will know unless you tell them – right?)

Homemade Pot Stickers & Dipping Sauce

These pot stickers are little pouches of golden goodness  filled with a delicious mixture of ground pork, shrimp, cabbage, mushrooms & water chestnuts.

Pot stickers earn their name from the way it is cooked.  These dumplings are fried on a pan without being flipped, causing the bottom to stick to the pot.   Water is then poured into the pot which steams the dumplings which helps release the “sticker” from the “pot”.  Fun right? (I’m sure you get more sticking when you’re not using a non-stick pan)

Rich & Moist Chocolate Cake! (easy to bake & hard to resist)

I’ve made this cake THREE times this week…so it has to be pretty darn good & easy.  You know how I like to cheat when I bake on the weekdays, but I made this from scratch on Sunday for a brunch with friends, Tuesday night for my friend’s birthday, and again on Thursday for my dad’s birthday.  The smell of this baking in the oven is heaven and everyone says it’s taste like a cross between chocolate cake and a brownie.  How perfect does that sound?  To top it all off you have a delicious sinful frosting that is smothered all over!  I’m tempted to go bake another one right now!  (Did I tell you I started working out again this week?  Now you know why!  I only went once…but who’s counting – it’s a start right?)

Okay, I confess…I own a dessert calendar!  I couldn’t help it – I picked up a 2010 Pillsbury Dessert Calendar at Michael’s for a buck last year.  Twelve months of recipes and pictures – I just couldn’t resist.  It hangs at the office for my coworkers to gawk at on a daily basis.  Some find the calendar funny, some find it fitting while others just find it strange & torturous that I would display something so tempting all year long.  To each their own I guess…

Miss March was Frosted Irish Cream Brownies and I just had to recreate it for St. Patrick’s Day.  I served these brownies with a scoop of vanilla bean ice cream after our corned beef dinner.

Leprechaun Cupcakes, a bit of green and gold

Okay, there is a good reason why my St. Patrick’s Day posts are after St. Patrick’s Day….I was really really sick last week and the time change really threw me for a loop.  I did make all of these treats prior to the 17th for my friends and family to enjoy though.

I wanted to try my hand at making something festive in honor of leprechauns and pots of gold.  I used a box mix to help me out because you know me with weeknight cooking/baking – I need to keep things simple to stay sane.  It’s really the frosting that  makes this cupcake and of course people were surprise to see a burst of color inside too.  Enjoy!!  Like the “Shamrock Jello Squares”  you can change up the color scheme to play to the different season or theme.
