Lately, I have been thinking a lot about combining the flavors of peanut butter and chocolate. It’s a classic pair that needs to marry in the form of a fudgey brownie. Why? Because I love peanut butter cookies and I love brownies and I want to enjoy them at the same time. This is a very easy and satisfying recipe that will be sure to please both adults and kids. It would also be great served with a scoop of vanilla ice cream.
Baked Salmon with Soy Sauce, Ginger & Lemon
I enjoy eating lighter and healthier dishes during the summer months. This recipe for baked salmon is delicious and so simple to make for a crowd. The salmon is marinaded in savory soy sauce with hints of ginger and lemon to liven it all up. Serve it up with rice and grilled or sauteed vegetables for a complete meal. If you don’t want to bake the salmon you can also opt to throw these fillets on a grill that has been lightly oiled for 6-8 minutes, flipping half way through.
Texas Governor’s Mansion Cowboy Cookies
My mother in law had these cookies at a neighborhood gathering and was hooked. She said she usually is satisfied with just one cookie….but she admitted that she couldn’t just eat just one of these Texas sized delights. She liked them so much she asked for the recipe and then passed it to me. Woothoo! This is Laura Bush’s delicious and addicting recipe for Texas Governor’s Mansion Cowboy Cookies. In Texas everything is big and this cookie is no exception. It’s large in size and bursting with flavor. It’s crispy on the outside, chewy on the inside, has rich chocolate and coconut running through it and pecans and oats for texture. It’s divine and I know it will be adored and devoured every time you bake them!
My siblings like to have their cookies warm with a small scoop of vanilla ice cream {swoon!}. But I enjoy mine with a glass of cold milk. It really is the perfect cookie!
Baked Eggs with Asparagus & Mushrooms
This recipe is a simple way to feed a crowd for a brunch, get together or even a shower. Everything goes into one dish – the protein & vegetables – and then into the oven. It’s easy, fast, and the eggs come out fluffy and light. This is a vegetarian friendly dish, but you can easily add diced ham or chopped cooked bacon to the dish before baking to make it savory.

Salted Caramel Chocolate Bars

I’ve been so anxious to post this recipe because it’s just so darn good. It’s gooey, salty & sweet, and the crust adds another layer of texture. It’s just yummy! I baked these for the Bake for Hope bake sale benefiting breast cancer research. They sold out and were a hit! I was inspired by my friend Kelly’s to die for Carmelita Bars. Recently, my siblings and cousins tried Kelly’s bars and they were in love. They insisted that we make her sinfully rich Carmelita Bars and of course they disappeared by the end of the day. They ranked these bars as one of the top five desserts of all time, granted they are between the ages of 10-15 and “of all time” to them is really not that long! The Carmelita Bars are so delicious and decadent that you only need a little bite. Many kids now a days are learning more about food and are more conscience of the ingredients that go into it what they eat (thank you parents, teachers & Jaime Oliver’s Food Revolution!). The kids were shocked about how much not so good for you things were in something that taste so good. I reworked the recipe and added another layer of flavor: salt. The coarse salt definitely helps balance out the bar’s gooey sweetness and enhances the flavor of the bar. The salted caramel chocolate bars are definitely rich, but aren’t quite as indulgent as the original Carmelita Bars. My brothers & sister still rank my new version as top 5 desserts, so it’s a winner! The kicker is the recipe is so easy! Continue reading →
