Chocolate Dipped Marshmallow “Cupcakes”

Happy Valentine’s Day everyone!  How can you celebrate Valentine’s Day without a little chocolate treat? What makes this even better is that it’s super easy to make and just adorable.  I found these JUMBO sized marshmallows at Target and just had to get them.  The Kraft Jumbo marshmallows are about 4 times bigger than the large sized marshmallows.  At the time I didn’t know what I was going to make with them – but I knew I wasn’t going to melt it down for rice crispy treats.  I wanted to showcase the JUMBO-ness of these fluffy marshmallows.  I’ve made many marshmallow pops in the past for a nautical baby shower, woodland baby shower and even a Valentine’s Day tea party…but this time I’m forgoing the stick and candy melts and going with a regular sized cupcake liner and quality Belgium milk chocolate!  I think these chocolate dipped marshmallow “cupcakes” turned out pretty cute and would be a fun activity to do with the kids.

Chocolate Dipped Marshmallow Cupcakes

Active time:  10 mins   Makes: 12- 14 “cupcakes” (depending on how generous you are with the chocolate)

Ingredients:

12 – 14 Jumbo Marshmallows

8 oz Milk Chocolate, coarsely chopped

Assorted sprinkles, nuts, coconut, candy etc.

Cupcake liners

Directions:

  • Fill a medium pot about 1/3 full with water, place a larger glass bowl on top of the pot and bring water to a simmer over medium high heat.  Make sure the water is not touching the bottom of the glass bowl.  Place half of the chopped chocolate into the bowl and stir with a rubber spatula to melt the chocolate.  Once the chocolate melts, turn off the heat and add the remaining chocolate, stir until the remaining chocolate melts and is smooth.  Be patient when melting the chocolate as you don’t want to melt it too quickly and cause the chocolate to burn or seize.  This will ensure a pretty and glossy finish on the chocolate. 
  • Keep the glass bowl on the pot, and carefully dip each marshmallow into the chocolate, covering the top half.  Place dipped marshmallows onto a cookie sheet; chocolate side up to decorate.  Decorate each marshmallow as you like with sprinkles, coconut, nuts, candy or whatever else you desire.  Have fun!   Leave decorated marshmallows on cookie sheet for the chocolate to set – about 1 to 2 hours.  Although, they’re great when the chocolate is still warm — messy but delicious!  Store in airtight container.

We shared these treats with our neighbors and it was a hit with both the kids and adults.  The kids loved the sprinkles and the M&Ms and the adults appreciated the quality of the creamy milk chocolate.  This is definitely a family friendly treat and activity in the kitchen.

"Will you be my Valentine?"...on second thought...I think I'll just keep these for myself! YUM!

    i bought so many valentine props and then got busy with work and didn’t use them ;( … maybe next year
