Three Cheese Baked Rigatoni

As part of Foodbuzz’s Tastemaker program, I received a sample of Newman’s Own pasta sauces, dressings, coupons and a Flip camera to record my very first recipe video!  I’m a little camera shy…so take it easy on me!  The goal was to create a fun family recipe that can be made in 30 minutes or less.  Newman’s Own holds a special place in my heart…it’s simply a great product and they donate their profits to charity!  Now that’s eating for a good cause.  It makes ya feel good to eat when it’s going to charity right?  

Okay – back to my recipe for Three Cheese Baked Rigatoni.  It’s a hearty and well rounded pasta dish with zucchini, crimini mushrooms, onions, Italian sausage, ricotta, mozzarella & parmesan.  It’s so easy to make and even more satisfying to eat.   I love baked rigatoni because it’s great for serving crowds and nice for parties since you can assemble everything ahead of time and bake it right before your guest arrive.    You have your protein, veggies, carbs, and dairy all in one place… it’s a balanced meal all in one!  We like to serve garlic bread along with this dish and we are set for a quick and easy crowd pleaser for both adults and kids. 

Three Cheese Baked Rigatoni

Prep:  15 mins         Cook time:  15 mins         Serves:  8

Ingredients:

12 oz. ground mild Italian sausage

1 lb. rigatoni pasta

½ large onion, diced

2 large zucchinis, quartered and sliced

10 oz. crimini mushrooms, sliced

1 jar of Newman’s Own Bombolina Pasta Sauce (Tomato & Basil) (24 oz.)

15 oz. low fat ricotta cheese

7 oz. shredded mozzarella cheese, divided

½ tsp. sea salt

½ tsp. black pepper

¼ C. shredded parmesan cheese

Basil

Directions:

  • Preheat oven to 400º.
  • Boil rigatoni in salted boiling water for 10 mins, then drain.
  • While pasta is cooking, coat a large pan with olive oil and saute Italian sausage until brown.  Remove sausage from pan, leaving juices in the pan.  Add onions to pan and cook until soft and the onions start to brown.
  • Add zucchinis and mushroom and saute until tender.  Add sausage back to the pan.  Add pasta sauce, salt and pepper and stir to combine. Simmer for about 2 minutes and then add the ricotta and stir to combine. 
  • Add half of the mozzarella cheese.  Turn off heat and stir to melt the mozzarella cheese.  Add pasta and stir to coat.  Season to taste with salt and pepper.
  • Spray a large baking dish with cooking spray and pour the pasta into the dish.  Top with remaining mozzarella and parmesan cheese and bake for 15 mins.  Serve with basil.
