Wow, what a difference a year makes.  This is the wonderful part of a blog…I get to see how much I’ve changed and progressed through the years.  The photo above was taken in 2011 while the photo below and the original post was from 2010 (less than 1 month after Kitchen Runway was “born”).  I love that my blog is a work in progress.  It’s serves as a reminder to me that there’s always room to improve and be better.  I’m constantly learning new things and look forward to continuing to share my journey with you. 
Crock Pot Corned Beef Cabbage

I doubled my veggies and there's a whole another corned beef waiting to be served - so don't panic about all of that cabbage!

Every year I cook two St. Patrick’s Day dinners:  one for my immediate family (usually on the weekend) and one for my friends (on St. Patrick’s Day). 

I double the recipe for my family dinner and will be tripling the recipe for my friends.  That’s a lot of corned beef and cabbage!

I love making this dish in the crock pot – I can cook it all day and the beef comes out so tender.  It’s savory and delicious!   I love that it’s a one pot meal, well maybe 2 pots.  Since there’s a hearty helping of vegetables no sides are needed. (and yes – I own two crock pots and use them simultaneously for this dish – I actually have to borrow my friend’s crock pot this week when I have to triple the recipe.)

I used to cook this the tradional method on the stove top – but that’s pretty impossible on a week night and I don’t want deal with the fuss of with watching a pot on the stove.  With the crock pot – I can plug it in – start and go about my day.  I love it!

Tasty Japanese Croquettes

How can you resist a fried potato cake?  It’s savory, crispy and oh so delicious!  It’s kinda of a production to make – so when we make it – we make a big batch!  Croquettes is a mixture of mashed potatoes, ground beef and onions, coated in panko and fried to a perfect golden brown.  It’s good by itself, but we like to eat the croquettes with a bit to Tonkatsu/Katsu sauce, a slightly sweet Japanese sauce.  You can find this at your local Asian supermarket or large grocery store. This is also great to make if you have left over mashed potatoes.
