blueberry almond biscotti

Blueberry Almond Biscotti

Blueberry Almond Biscotti is so easy to make and they require very few ingredients. Many of the ingredients are regular things that you will find in your pantry, such as butter, flour, sugar, eggs, baking powder, extract and some sort of dried fruit or nuts. It's simple to make but it does requires time and patience since it is twice baked after all. Derrick loves blueberries and almonds, so I thought I would incorporate those into the biscotti. It's a great combination and it's a fun treat anytime of the day.
oxtail and kobacha tacos

Braised Oxtail & Kabocha Tacos

Oxtail and Kabocha soup is a traditional Vietnamese soup that I grew up with. I wanted to take this traditional comfort meal and make it accessible and modern. Here in Southern California - fusion cuisine is very popular. I've seen kim chee quesadillas and carnitas French fries so why not oxtail and kabocha tacos? It's incredibly tender and flavorful. The combination of oxtail and kabocha is very balanced. The beef is rich and savory while the Japanese pumpkin is sweet and tender.
